$695 Course Fee

The course fee includes access to in-person practical exercises, a class study guide, coaching from the AST, and preparation to take the SCA online exam. Materials needed for the practical exercises are also provided.

Pre-requisites

This course has no pre-requisites, anyone can join with any level of experience.

This course builds upon the foundations in the Introduction to Coffee program.

What is the class about?

The SCA Barista Foundation class is a course that focuses on the barista craft and the skills required to set a grinder, prepare espresso, and texture milk for cappuccinos and lattes. The course allows one to gain an introductory understanding of coffee itself and set a foundation from which to build practical skills in espresso preparation and milk techniques for latte art including health and safety practices, customer service, and equipment maintenance.

SCA Certificate

This course will prepare you to take the SCA online exam for that specific module. Once you pass the exam, you will receive certification from the SCA and S points towards the SCA coffee skills diploma.

Course Details

The topics covered in the course include:
• Describing the main differences between Arabica and Robusta coffee

• Coffee storage and freshness

• History of Espresso (Espresso machines and beverage)

• Different types of espresso machines, components, and functions

• Different types of grinders, components, and functions

• Follow a recipe using correct brewing routine, to prepare espresso according to SCA's standards

• Describe the sensory process and identify key sensations.

• Maintain clean equipment through barista service

• Steam and texture milk to achieve glossy micro foam

• Create different beverages from a cafe menu according to their standards

• Adjusting grinders to maintain consistent espresso shots

• Pour a basic latte art pattern (Heart or Tulips)

• Cleaning and maintenance on espresso machines and grinders'

• Efficient workflow practices

• Best practices for customer service, health, and safety

Course activities

1.Cupping activity: Arabica vs Robusta

2.Cupping activity: light vs dark roasts

3.Produce an espresso according to SCA standards, using the SCA barista routine

4.Taste different espresso and make changes to dial in the shot.

5.Produce an Americano according to SCA parameters

6.Steam milk and create foam according to SCA parameters

7.Pour a cappuccino with proper texture with a heart
